This is the perfect transitional food and is often used for therapy or quality of life measures but really, who hasn't enjoyed this as a fresh treat?!
Ice chips, or in this case a slushy, is often used in care settings as a means of therapy or quality of life for people who have difficulty managing thin fluids or even sometimes no food or drink at all.
As a transitional food we know that when it is served and when we begin to eat it, it will be a solid. As it is moved around the mouth though, it will quickly become a dual consistency or melt completely to a liquid. This means that someone has to be able to manage thin fluids to safely manage this food.
The beauty in this recipe is that although I chose a tropical juice and orange food colouring, you can substitute any flavour of juice and any food colouring you can get your hands on to adjust the recipe to whatever you like 🍇🍒🍊🍉🍍🥝
Shaving the ice will be a walk in the park if you have a specific kitchen appliance to do that is either in your fridge or as a stand alone gadget. I will admit, I ran into a little trouble breaking down the ice in the blender- too much blending turned it into a dense form and too little meant there were big chunks of ice ⛄️
SO... I went for over pulsing the ice and stirring it up with the syrup in a bowl to make sure it was moist enough and the flavour was well mixed through before serving. If your kitchen is high key enough to have said gadgets, you may be able to serve up first and pour the syrup over.
At the end of the day, be flexible and get creative ✨
Fruit Juice Slushie
Serves 2
INGREDIENTS
3 cups juice
1 cup caster sugar
Food colouring of your choice
4 cups ice, shaved
METHOD
1. Warm juice in a saucepan and melt sugar through.
2. Bring to the boil and allow to simmer for 40 minutes.
3. Add food colouring to desired colour.
4. Allow the syrup to cool and/or refrigerate.
5. Shave ice by pulsing in blender until desired consistency is reached. Ensure there are no chunks left over or remove them.
6. Fill a small bowl with the shaved ice and slowly add syrup, ensuring there is no separate liquid. Mix until the syrup is evenly spread through the ice.
7. Transfer the flavoured ice into a cup or serving bowl and serve immediately.
