RECIPE: Level 2 Mildly Thick- Mango Lassi

Be this a fresh little summer hit or to accompany a spicy main dish, it's the perfect thick, rich and smooth drop to liven up your mealtime ☀️🥭



Growing up with Anglo-Indian heritage, the Mango Lassi brings back so many great memories of hot summer afternoons after a day outside or the premise to a hot spicy dinner in the humidity of Calcutta. After all this time I was unknowingly tantalised by a mildly thick beverage 😏


I won't lie, it took me a few goes to get the consistency smack bang in the middle of the Mildly Thick range using the Syringe Test BUT here she is... (she's below).


However, keeping in mind that the consistency can change with the type of mango, the season we're in, the brand of yoghurt and anything else in between. So create with caution‼️


The one thing I had to compromise on was the ice. The way I know Mango Lassi is with a heap of crushed ice mixed through to keep it cool (in that Calcutta humidity or Australian heat 😓) except that doing this would alter the consistency of the drink as the ice melted.


SO... my tip to you would be to keep your ingredients refrigerated so that when you make it fresh it is as cold as whipping a drink out of the fridge. You could even try freezing your mango pieces (please skin and chop it up first, don't make life hard for yourself) or use the frozen mango cheeks you can buy in the shops. Again though, be careful with any extra water content it may hold and always test before you serve to someone who needs Mildly Thick.


And you know what, if someone requires Slightly Thick (Level 1) or Moderately Thick (Level 3), play around with the amount of yoghurt (less for Level 1, more for Level 3) and get them in on this little summer hit ☀️


Mango Lassi


Serves 2


INGREDIENTS

1.5 cups mango or approximately 380g

1 cup yoghurt

1 cup water


METHOD


1. Skin and cut up the mangoes. If using frozen mango cheeks, move straight to step 2.


2. Add all of the ingredients to the blender.


3. Blend until well combined.


4. Serve with extra honey or sugar if the mango is not ripe or sweet to your liking or dust with cinnamon for a bit of extra flavour.
